I’m prettttttty excited about tonight. Spencer’s going to find out about Toby on Pretty Little Liars, the Parenthood season finale is on, and I’ve been smelling dinner in the crockpot all day long and cannot wait to eat it.
Pesto Ranch Chicken
Ingredients
- 1 pound chicken breasts
- 6 oz jar of pesto
- 1 packet Ranch Dressing Seasoning mix
- 1/2 cup chicken broth
Directions
- Place chicken in crockpot. Smear pesto all over it. Sprinkle with Ranch seasoning. Pour chicken broth over all of it.
- Put the lid on and cook on low for 6-8 hours (or high for 3-4 hours).
I was really disappointed at first because there was no smell coming from the crockpot for most of the day. Then I left my apartment to run a couple errands. When I came home, the aroma hit me as soon as I walked in the door. Well, it tasted just as delicious as it smelled. It was so tender, I had a hard time getting the chicken breasts out of the crockpot in one piece. I whipped up some mashed potatoes for a side dish and topped them with some of the pesto mixture that was left in the crockpot. SO GOOD. Thanks for the recipe, Picky Palate!
Added bonus? My friend Staci (such a sweetheart) dropped off an early birthday gift today. Guess we’re having dessert tonight!

I used to loveee dipping my chicken into ranch dressing. Went through a full blown addiction in high school/middle school .This recipe looks like a great way to dress that up a bit!
